Pork and Mash Gratin

Ingredients

  • 400g potatoes
  • 200g piece pork fillet
  • 1 sprig fresh sage
  • 20g cheddar cheese
  • 4 slices prosciutto
  • Broccoli

Method

  1. Prehea the grill to high. Wash the potatoes, chop into 3cm chunks, then cook in a large pan of boiling salted water with the lid on for 12 minutes or until tender.
  2. Meanwhile, put a shallow casserole pan on a high heat. Season the pork with sea salt and black pepper then place in the pan with 1 tbsp olive oil and sear for 8 minutes, turning regularly.
  3. Remove the prok to a plate, toss the sage leaves into the fat in the pan for 5 seconds then scoop onto a plate.
  4. Drain the potatoes, tip into the casserole pan, grate over half the cheese, add 1 tbsp olive oil and mash well, loosening with a splash of water if needed. Taste and season, and spread out to the edges of the pan. Grate over the remaining cheese on top.
  5. Place the pork on top, then gratinate under the grill for 14 minutes.
  6. Lay the prosciutto around the pork in waves, sprinkle over the sage, then grill for 2 more minutes. Check the pork is cooked to your liking. Microwave the broccoli.
  7. Rest for 2 minutes then slice and dish up.
