Quick Pork Stew

Ingredients

  • 1 tbsp oil
  • 1 pork fillet cut into cubes, approx 225g
  • 1 onion, diced
  • 1 red pepper, diced
  • 75g buckwheat
  • 600ml chicken stock (1 stock cube)
  • 1 tsp wholegrain mustard
  • 1 courgette, diced

Method

  1. Heat the oil in a frying pan and fry the pork until brown.
  2. Add the onion and pepper and fry for 2-3 minutes.
  3. Stir in the buckwheat, stock, and mustard. Cover and simmer gently for 15 minutes.
  4. Stir in the courgettes and cook for a further 5 minutes.
  5. Season to taste and serve.
