Ingredients
- 1 tbsp oil
- 1 pork fillet cut into cubes, approx 225g
- 1 onion, diced
- 1 red pepper, diced
- 75g buckwheat
- 600ml chicken stock (1 stock cube)
- 1 tsp wholegrain mustard
- 1 courgette, diced
Method
- Heat the oil in a frying pan and fry the pork until brown.
- Add the onion and pepper and fry for 2-3 minutes.
- Stir in the buckwheat, stock, and mustard. Cover and simmer gently for 15 minutes.
- Stir in the courgettes and cook for a further 5 minutes.
- Season to taste and serve.
