Reverse Sear Steak

Ingredients

  • 2 steaks, any kind
  • Salt, pepper, oil

Method

  1. Preheat the oven to 135 °C.
  2. Rub salt and pepper and oil into the steaks.
  3. Cook on grill tray placed over foil for about 30 minutes (longer if the steaks are thicker) until the desired temperature is reached. Medium is about 65 °C on the BBQ thermometer (increased from 60 °C, which was pretty rare).
  4. Remove and rest under foil for 5 - 10 minutes.
  5. Heat griddle until screamingly hot.
  6. Sear steaks 1 min each side and serve immediately.
