Reverse Sear Steak

Ingredients
- 2 steaks, any kind
- Salt, pepper, oil
Method
- Preheat the oven to 135 °C.
- Rub salt and pepper and oil into the steaks.
- Cook on grill tray placed over foil for about 30 minutes (longer if the steaks are thicker) until the desired temperature is reached. Medium is about 65 °C on the BBQ thermometer (increased from 60 °C, which was pretty rare).
- Remove and rest under foil for 5 - 10 minutes.
- Heat griddle until screamingly hot.
- Sear steaks 1 min each side and serve immediately.
