Roast Beef Dinner

Ingredients

  • Potatoes suitable for roasting
  • Olive oil
  • Plain flour
  • 5large carrots
  • Beef joint approx. 0.5kg
  • 1 tin sweetcorn
  • Gravy granules
  • Red wine (optional)
  • Yorkshire puddings
  • Onion sauce

Method

  1. Peel potatoes and cut into evenly sized large chunks. Wash, and then place in a large saucepan. Cover with water, then bring to the boil. Boil potatoes for about 10 minutes, watching closely. When the water goes cloudy and the outside of the potatoes starts to go fluffy, they are done. Do not boil for too long, or you will end up with mashed potatoes.
  2. Drain the water, then if the potatoes aren’t very fluffy put the lid on and shake gently. Carefully remove the potatoes and place on a roasting tray. Sprinkle salt on top and a little plain flour for extra crunch. Pour olive oil on top of each potato. It seems like a lot of oil, but this is what will make them crispy. Place in the oven at 200°C.
  3. After 20 minutes, take the potatoes out of the oven. Tilt the pan to one side and use a spoon to scoop up the oil. Baste each potato. Put back in the oven.
  4. In the meantime, peel the carrots, wash them, and cut them into large /chunky batons. Brush a small amount of oil on top.
  5. Baste the potatoes for the second time in the same way. Put the carrots in the oven in a separate roasting tray, arranged to leave a hole in the middle.
  6. After a further 20 minutes, turn the potatoes over and baste them again. Place the roast beef in the centre of the carrots.
  7. Mix up Yorkshire puddings.
  8. After 20 minutes baste the potatoes again and put the Yorkshire puddings in the oven. They should rise, and during this time it is important not to open the oven.
  9. Again, after twenty minutes take the potatoes out to baste. If you haven’t already removed them, the Yorkshire puddings should definitely be done. Check the beef. There should be about 20 minutes left but the beef may need longer – you can cut it open to check. During this final 20 minutes make the onion gravy. The timing is tricky to co-ordinate, but everything should be done about 2 hours after starting.
