Roasted Tomato Pasta Sauce

Ingredients

  • 1kg ripe tomatoes, halved
  • 60ml olive oil
  • 1/2 tbsp salt
  • 1/2 tbsp black pepper
  • 1 clove garlic
  • Splash balsamic vinegar
  • Pinch sugar
  • 2 tbsp sundried tomato puree

Method

  1. Preheat oven to 200c.
  2. Mix together the olive oil, salt, pepper, garlic and vinegar in a large baking dish.
  3. Swirl the tomatoes in the mixture to coat, then sprinkle with a pinch of sugar (optional). Bake in the preheated oven for 1 hour, stirring once half way through.
  4. Puree the sauce then pass it through a sieve.
  5. Put back on the hob; add 2 tbsp sun dried tomato puree and some herbs; simmer and serve with meatballs and pasta etc.

Makes approx. 4 portions.
