
Ingredients
- 1kg ripe tomatoes, halved
 
- 60ml olive oil
 
- 1/2 tbsp salt
 
- 1/2 tbsp black pepper
 
- 1 clove garlic
 
- Splash balsamic vinegar
 
- Pinch sugar
 
- 2 tbsp sundried tomato puree
 
Method
- Preheat oven to 200c.
 
- Mix together the olive oil, salt, pepper, garlic and vinegar in a large baking dish.
 
- Swirl the tomatoes in the mixture to coat, then sprinkle with a pinch of sugar (optional). Bake in the preheated oven for 1 hour, stirring once half way through.
 
- Puree the sauce then pass it through a sieve.
 
- Put back on the hob; add 2 tbsp sun dried tomato puree and some herbs; simmer and serve with meatballs and pasta etc.
 
Makes approx. 4 portions.
