Roasted Vegetable Cous Cous

Ingredients
- 2 packs Mediterranean roasting veg (or a mix of courgettes, red and yellow peppers, red onion, and cherry tomatoes. Carrots work nicely too)
- Garlic oil
- 100g giant wholewheat cous cous
- Rosemary, salt, pepper
- Cauliflower cheese grill or vegetable crisp bake
Method
- Drizzle the vegetables with garlic oil and roast for about 45 minutes, turning occasionally.
- After 15 minutes, put the cauliflower cheese grill or crisp bake in the oven as well.
- Cook the cous cous according to package instructions. Flavour with a little rosemary, salt, and pepper.
- Stir the roasted veg through the cous cous and serve.
