Roasted Vegetable Cous Cous

Ingredients

  • 2 packs Mediterranean roasting veg (or a mix of courgettes, red and yellow peppers, red onion, and cherry tomatoes. Carrots work nicely too)
  • Garlic oil
  • 100g giant wholewheat cous cous
  • Rosemary, salt, pepper
  • Cauliflower cheese grill or vegetable crisp bake

Method

  1. Drizzle the vegetables with garlic oil and roast for about 45 minutes, turning occasionally.
  2. After 15 minutes, put the cauliflower cheese grill or crisp bake in the oven as well.
  3. Cook the cous cous according to package instructions. Flavour with a little rosemary, salt, and pepper.
  4. Stir the roasted veg through the cous cous and serve.
