Sausage and Fusilli Pasta

Ingredients

  • 400g sausages
  • 1 onion
  • 2 garlic cloves
  • 1 yellow pepper
  • 1 tsp paprika
  • 1 tsp mixed herbs
  • Optional chilli flakes
  • 400g tin plum tomatoes
  • 250ml vegetable stock
  • 200g wholewheat pasta
  • Salt, pepper, parmesan

Method

  1. Grill the sausages for about 10 minutes until they are browned on all sides.
  2. Heat the oil and fry the onion and garlic. Add the yellow pepper, paprika, herbs, and chilli. Cook until starting to turn golden. Pour in the tinned tomatoes, and add salt and pepper to taste. Cook for about 15 minutes, adding vegetable stock gradually to achieve the right consistency.
  3. Cut the sausages diagonally into 1cm pieces. Add to the sauce and mix well.
  4. Cook the pasta in salted water until tender, per package instructions.
  5. Drain the pasta, add to the sauce, and serve with parmesan.
