Sausage, Carrot, and Cumin Hash

Ingredients
- 2 medium sized potatoes
- 3 large carrots
- Olive oil
- 4 sausages
- 1 onion
- 1 garlic clove
- 1 tsp cumin seeds
- Fresh flatleaf parsley
- 30g gruyere cheese
Method
- Prepare and chop the potatoes and carrots into 1-2cm chunks. Add to a pan of water and bring to the boil. Cook for 10 minutes once they have started to boil. Drain and set aside.
- Meanwhile, heat the olive oil and fry the onion until golden. Add the garlic and sausage, then the cumin seeds. Add the potatoes and carrots and cook for 10 minutes, stirring occasionally. Heat the grill.
- Stir through the parsley and grate over the cheese; grill for 5 minutes on a high heat until golden and bubbling.
