Sausage Traybake

Ingredients

  • 4 sausages
  • 500g potatoes
  • 3 carrots
  • Garlic oil
  • 1 red onion
  • 1 Conference pear

Honey Mustard Sauce

  • 25ml honey
  • 1 ½ tbsp. wholegrain mustard
  • 1 ½ tsp English mustard
  • ½ tbsp. white wine vinegar
  • Dash of salt and pepper

Method

  1. Heat the oven to 200C. Add the sausages to a large roasting tray. Wash and scrub the potatoes, peel the carrots. Chop the potatoes into bitesize chunks and slice the carrots on the diagonal. Add to the tray with the sausages and drizzle with a little garlic oil. Bake for 25 mins.
  2. Chop the red onion into wedges. Peel and quarter the pear. Prepare the sauce by mixing all of the ingredients together and stirring to combine.
  3. Add the red onion and pear to the pan and toss the sausages and carrots / potatoes well. Baste with oil and drizzle over the sauce. Return to the oven for 40 minutes until bubbling and golden, and everything is cooked through. You may need to toss once or twice to ensure even roasting.
  4. Serve hot, garnished with optional fresh thyme sprigs.
