Sesame Chicken

Ingredients
- 2 small chicken breasts, chopped into small pieces
- 2 portions brown rice
- Chicken stock cube
- 50g honey
- 3 tablespoons soy sauce
- 2 tablespoons sesame seeds
- 1 garlic clove finely chopped
- 1 egg white
- 2 tablespoons cornflour
- 4 green onions, chopped
- Broccoli
Method
- Cook the brown rice and chicken stock as per usual.
- Combine the honey, soy sauce, sesame seeds and garlic in a small jug. Set to one side.
- Prepare the broccoli (wash and chop into small florets). Place in a bowl that can be microwaved and set to one side. Prepare the salad onions and add to the jug of sauce.
- Whisk the egg white and cornflour until smooth.
- Chop the chicken into small pieces. Place in the bowl with the egg white coating. Add a few twists of black pepper. Toss until well coated.
- Turn the chicken out into a hot pan and saute, stirring frequently.
- Once golden and cooked through, microwave the broccoli for three minutes and add the sauce to the chicken. Allow to simmer while the broccoli cooks, then add the broccoli to the pan and stir. It is ready to serve when the sauce has thickened slightly.
- Serve over the freshly cooked brown rice and garnish with additional green onions if desired.
