Shortbread Cookies

Ingredients
- 125g butter
- 55g caster sugar plus extra for dusting
- 180g plain flour
- Optional: 120g chocolate chips, fudge pieces
Method
- Heat the oven to 180C.
- Beat the butter and sugar together until smooth.
- Stir in the flour to get a smooth paste / dough. Mix in the fudge chunks or chocolate chips if using, trying to work the dough as little as possible.
- Turn on to a work surface and gently roll out until the dough is 1cm thick.
- Cut into shapes and transfer to baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.
- Bake in the oven for 15 minutes until pale golden-brown. Cool on the tray for a short time then transfer to a wire rack.
N.B The cookies will seem very soft when removed from the oven but as long as they are pale-golden brown they will solidify as they cool (5 to 10 minutes).
