Shortbread Cookies

Ingredients

  • 125g butter
  • 55g caster sugar plus extra for dusting
  • 180g plain flour
  • Optional: 120g chocolate chips, fudge pieces

Method

  1. Heat the oven to 180C.
  2. Beat the butter and sugar together until smooth.
  3. Stir in the flour to get a smooth paste / dough. Mix in the fudge chunks or chocolate chips if using, trying to work the dough as little as possible.
  4. Turn on to a work surface and gently roll out until the dough is 1cm thick.
  5. Cut into shapes and transfer to baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.
  6. Bake in the oven for 15 minutes until pale golden-brown. Cool on the tray for a short time then transfer to a wire rack.

N.B The cookies will seem very soft when removed from the oven but as long as they are pale-golden brown they will solidify as they cool (5 to 10 minutes).
