Ingredients
- 2 tsp olive oil
 
- 1 onion, peeled and thinly sliced
 
- 6 reduced-fat pork sausages, sliced
 
- 400g tinned chopped tomatoes
 
- 400g tinned butter beans, drained
 
- 2 tsp smoked paprika
 
- 400ml vegetable stock
 
- 20g wholegrain mustard
 
- Salt and pepper to taste
 
Method
- Heat the oil in a saucepan over medium to high heat. Add the onion and fry for a few minutes.
 
- Add the sliced sausage and cook until crispy and cooked through.
 
- Add the tomatoes, butter beans, paprika, stock, mustard, and stir everything together.
 
- Leave to simmer for 5 minutes, or until the stew has thickened a little.
 
- Season to taste and serve up!
