Simple Sausage Stew

Ingredients

  • 2 tsp olive oil
  • 1 onion, peeled and thinly sliced
  • 6 reduced-fat pork sausages, sliced
  • 400g tinned chopped tomatoes
  • 400g tinned butter beans, drained
  • 2 tsp smoked paprika
  • 400ml vegetable stock
  • 20g wholegrain mustard
  • Salt and pepper to taste

Method

  1. Heat the oil in a saucepan over medium to high heat. Add the onion and fry for a few minutes.
  2. Add the sliced sausage and cook until crispy and cooked through.
  3. Add the tomatoes, butter beans, paprika, stock, mustard, and stir everything together.
  4. Leave to simmer for 5 minutes, or until the stew has thickened a little.
  5. Season to taste and serve up!
