Grilled Pork Chops with Tomato and Smoked Paprika Butter

Ingredients
- 2 large pork loin steaks (or chops)
- Olive oil
- 400g new potatoes
- 2x portions tenderstem broccoli
For the butter
- 100g butter, slightly softened
- 1/2 tsp tomato puree
- 1/2 tsp smoked paprika
- 1 tsp lemon juice
- 1 tsp dijon mustard
- Dried parsley
Method
- Make the flavoured butter first. This must be done in advance. Mix all the ingredients for the butter together in a bowl - beat until combined. Wrap in cling film and roll into a log. Chill in the fridge until firm.
- Put the potatoes on to boil - about 15 - 20 minutes.
- Season the pork chops with salt and pepper then rub with a little oil. Heat a griddle pan then fry for 5-8 minutes on each side until golden brown and cooked through.
- Microwave the broccoli. Crush the potatoes a little using a potato masher.
- Serve the chops on warm plates with a slice of paprika butter melting over the top and the broccoli and potatoes on the side.
