Smoky Bacon Soup

Ingredients

  • 2x 400ml portions of ham stock
  • 1 tin chopped tomatoes
  • 3 sticks celery
  • 3 carrots
  • 1 large onion
  • 1 large sweet potato
  • 2 tins Morrisons 'mixed beans' (borlotti, kidney, cannelinni)
  • About 50g red lentils
  • Handful wholewheat pasta
  • 3 rashers smoked streaky bacon

Method

  1. Put the ham stock in a large saucepan and bring to the boil. Add the tin of chopped tomatoes.
  2. Add the celery, carrots, onion, and sweet potato, chopped to size. Add the bacon.
  3. Drain and rinse the beans and lentils; add and allow to simmer for about an hour or so.
  4. Add the wholewheat pasta and cook until al dente. Cool and dish into 400ml portions.
