Smoky Bacon Soup

Ingredients
- 2x 400ml portions of ham stock
- 1 tin chopped tomatoes
- 3 sticks celery
- 3 carrots
- 1 large onion
- 1 large sweet potato
- 2 tins Morrisons 'mixed beans' (borlotti, kidney, cannelinni)
- About 50g red lentils
- Handful wholewheat pasta
- 3 rashers smoked streaky bacon
Method
- Put the ham stock in a large saucepan and bring to the boil. Add the tin of chopped tomatoes.
- Add the celery, carrots, onion, and sweet potato, chopped to size. Add the bacon.
- Drain and rinse the beans and lentils; add and allow to simmer for about an hour or so.
- Add the wholewheat pasta and cook until al dente. Cool and dish into 400ml portions.
