Soda Bread with Cheese and Bacon

Ingredients

  • 385g gluten free brown bread flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 350ml buttermilk
  • 128g extra strong grated cheddar cheese
  • 128g cooked streaky bacon, choppedd

Method

  1. Preheat the oven to 230c. Let the oven remain at 230c for at least 15 minutes prior to putting the bread in the oven. Line a baking sheet with parchment and have a bowl handy that is oven safe that can cover the bread while it bakes (pyrex glass mixing bowl).
  2. If you haven't already, cook the bacon.
  3. In a large bowl, combine the flour, baking soda, baking powder, and salt.
  4. In another bowl, combine the eggs, buttermilk, cheese and bacon. Make sure the eggs are combined well with the other ingredients. 5.Pour all of the wet ingredients into the dry ingredients. Stir until the mixture forms a dough. It shouldn't be sticky; it should form a ball easily in your hands. If it seems sticky, add a small amount of flour.
  5. Form into a ball and place on baking parchment. Using a sharp knife, cut a cross across the top of the dough, about 1/2 inch deep. Cover with the large oven safe bowl and place in the hot oven. Bake uncovered for 45 minutes, then remove the bowl and cook for a further 10 - 15 minutes uncovered. The bread is done when it reaches 200 degrees. This is about 55-60 minutes in total. Cool for at least an hour before slicing.
