Method
- Saute the onion for a few minutes.
- Chop the tomatoes, pepper, and garlic. Add to the onion and saute for about 5 minutes.
- Slice the sausages into rounds (N.B this recipe assumes they have already been cooked). Add to the pan and stir.
- Once sizzling, add the oregano, salt, and pepper. Add 100ml red wine and cover the pan. Simmer for about 20 minutes; stir periodically and add a splash of water if it starts to stick.
- Serve with white rice.
N.B could add red onion / cherry tomatoes / jarred roasted red pepper / extra sausage etc. to bulk out.
