Ingredients

  • 1 onion
  • 2 beef tomatoes
  • 1 red pepper
  • 1 garlic clove
  • 3 or 4 cooked sausages (Waitrose pork & chorizo were perfect)
  • 100ml red wine
  • Oregano
  • Salt and pepper
  • Optional dash cayenne pepper (not required if using spicy sausages)

  • 175g white rice

Method

  1. Saute the onion for a few minutes.
  2. Chop the tomatoes, pepper, and garlic. Add to the onion and saute for about 5 minutes.
  3. Slice the sausages into rounds (N.B this recipe assumes they have already been cooked). Add to the pan and stir.
  4. Once sizzling, add the oregano, salt, and pepper. Add 100ml red wine and cover the pan. Simmer for about 20 minutes; stir periodically and add a splash of water if it starts to stick.
  5. Serve with white rice.

N.B could add red onion / cherry tomatoes / jarred roasted red pepper / extra sausage etc. to bulk out.
