Spicy Spinach & Mixed Bean Cous Cous

Ingredients

  • Onion
  • Garlic clove
  • 150g cous cous
  • 225ml water
  • Vegetable stock cube
  • Half bag of spinach / several handfuls
  • 1 tin Morrisons five beans in tomato sauce
  • Pinch chilli flakes
  • Small tin sweetcorn

Method

  1. Heat medium saucepan. Fry an onion in garlic oil with the chopped garlic.
  2. Once golden, add the boiling water and dissolve in a stock cube. Add the cous cous and a pinch of chilli flakes and simmer for 5 minutes. Microwave the beans for about 4 minutes. Once the cous cous has had its cooking time, stir in the beans and sweetcorn. Turn the heat down to low and cover. Leave for 5 minutes, stirring occasionally.
  3. Add the spinach and stir through. Leave the lid on and allow the spinach to wilt. Fluff with a fork, and serve.
