Steak with Brown Butter New Potatoes

Ingredients

  • 500g new jersey potatoes
  • 2 bay leaves
  • Salt, pepper
  • Approx 25g butter

  • 2x frying steak

  • Mixed veg

Method

  1. Preheat the oven to 200C; put in an empty roasting tin to preheat.
  2. Bring a pan of salted water to the boil. Add the potatoes and 2 bay leaves. Boil for 10 minutes until the potatoes are just tender.
  3. Drain the potatoes and leave in the colander. Add the butter to the hot pan and cook until it has foamed up, started to go brown, and smells nutty. Toss the potatoes and bay leaves in the butter; add pepper and then transfer to the hot roasting tin.
  4. Roast for 30 minutes until golden and crispy.
  5. Cook the steaks for 3 minutes per side and the veg per package instructions.
