Ingredients
- 2 onions
 
- 2 garlic cloves
 
- 1 red pepper
 
- 1 large sweet potato
 
- Pinch chilli flakes
 
- 1.5 litres veg stock made with two cubes
 
- 1 1/2 tsp ground cumin
 
- 1 tin Cannelinni beans
 
- 2 small tins sweetcorn
 
- Salt, pepper
 
Method
- Heat the olive oil and saute the onions. Add the sweet potato and red pepper and saute until golden. Add the chilli flakes, cumin, salt and pepper and stir for a further minute.
 
- Make and add the veg stock. Simmer for about 20 minutes.
 
- Pour half the soup into a blender and blend until smooth. Add back to the pan. Add the cannelinni beans and sweetcorn. Simmer for a further 20 minutes or so and dish.
 
Makes about 6 portions.
