Sweet Potato Chowder

Ingredients

  • 2 onions
  • 2 garlic cloves
  • 1 red pepper
  • 1 large sweet potato
  • Pinch chilli flakes
  • 1.5 litres veg stock made with two cubes
  • 1 1/2 tsp ground cumin
  • 1 tin Cannelinni beans
  • 2 small tins sweetcorn
  • Salt, pepper

Method

  1. Heat the olive oil and saute the onions. Add the sweet potato and red pepper and saute until golden. Add the chilli flakes, cumin, salt and pepper and stir for a further minute.
  2. Make and add the veg stock. Simmer for about 20 minutes.
  3. Pour half the soup into a blender and blend until smooth. Add back to the pan. Add the cannelinni beans and sweetcorn. Simmer for a further 20 minutes or so and dish.

Makes about 6 portions.
