Sweet Potato, Cherry Tomato, and Halloumi Cous Cous

Ingredients

  • Garlic oil
  • 1 sweet potato
  • 1 red onion
  • Handful / half pack cherry tomatoes
  • 100g halloumi cheese
  • 100g wholewheat cous cous
  • 500ml water
  • Olives
  • Fresh parsley

Method

  1. Chop the sweet potato; drizzle with garlic oil and place in the hot oven.
  2. Meanwhile, chop and saute the red onion in a pan.
  3. Quarter the cherry tomatoes and chop the halloumi. Add to the sweet potato and drizzle with a little extra oil.
  4. Remove the onion and set to one side. Add 500ml boiling water and the cous cous; cover and cook for 8 minutes then drain.
  5. Stir through the onion, roasted veg, fresh parsley, and olives. Serve.
