Sweet Potato, Cherry Tomato, and Halloumi Cous Cous

Ingredients
- Garlic oil
 
- 1 sweet potato
 
- 1 red onion
 
- Handful / half pack cherry tomatoes
 
- 100g halloumi cheese
 
- 100g wholewheat cous cous
 
- 500ml water
 
- Olives
 
- Fresh parsley
 
Method
- Chop the sweet potato; drizzle with garlic oil and place in the hot oven.
 
- Meanwhile, chop and saute the red onion in a pan.
 
- Quarter the cherry tomatoes and chop the halloumi. Add to the sweet potato and drizzle with a little extra oil.
 
- Remove the onion and set to one side. Add 500ml boiling water and the cous cous; cover and cook for 8 minutes then drain.
 
- Stir through the onion, roasted veg, fresh parsley, and olives. Serve.
