Sweetcorn stuffed Squash

Ingredients

  • 1 harlequin squash
  • 1 tin creamed sweetcorn
  • Cheddar cheese
  • Tortilla Chips

Method

  1. Preheat oven to 200c. Wash the squash and then slice off the stem and top-section. Make a hole in the top and scrape out the seeds and pulp. Rinse with water.
  2. Microwave for about 2mins 30.
  3. Fill with creamed sweetcorn and grate a little cheddar on top. Place in the oven and bake for about 40 minutes, until golden and bubbling.
  4. Remove from the oven for 5 minutes before serving. Delicious accompanied with some tortilla chips.
