Sweetcorn stuffed Squash

Ingredients
- 1 harlequin squash
- 1 tin creamed sweetcorn
- Cheddar cheese
- Tortilla Chips
Method
- Preheat oven to 200c. Wash the squash and then slice off the stem and top-section. Make a hole in the top and scrape out the seeds and pulp. Rinse with water.
- Microwave for about 2mins 30.
- Fill with creamed sweetcorn and grate a little cheddar on top. Place in the oven and bake for about 40 minutes, until golden and bubbling.
- Remove from the oven for 5 minutes before serving. Delicious accompanied with some tortilla chips.
