Swiss chard and white bean minestrone

Ingredients

  • 1 tbsp butter
  • 1 onion, chopped
  • 1 small bunch swiss chard, finely chopped
  • 1 litre vegetable stock (made with 2 cubes)
  • 1 tin cannellini beans, drained but not rinsed
  • Courgette

  • Thick slices of ciabatta

  • 1 garlic clove, olive oil

  • Parmesan

Method

  1. Melt the butter over a medium heat. Add the onion and cook for 5 miutes until soft.
  2. Add the swiss chard and cook for 5 minutes and stir often until softened.
  3. Add the courgette, stock, and beans and gently bring to the boil. Add salt (if necessary) and pepper.
  4. Optional: toast the ciabatta until golden on both sdes. Rub the garlic clove over the warm bread and drizzle with olive oil.
  5. Place the bread in the soup bowl (if using) and ladle over the warm soup. Sprinkle with parmesan cheese and serve immediately.

Made 3 portions. Consider adding mini pasta and extra onions?
