Swiss chard and white bean minestrone

Method
- Melt the butter over a medium heat. Add the onion and cook for 5 miutes until soft.
- Add the swiss chard and cook for 5 minutes and stir often until softened.
- Add the courgette, stock, and beans and gently bring to the boil. Add salt (if necessary) and pepper.
- Optional: toast the ciabatta until golden on both sdes. Rub the garlic clove over the warm bread and drizzle with olive oil.
- Place the bread in the soup bowl (if using) and ladle over the warm soup. Sprinkle with parmesan cheese and serve immediately.
