Smoky Tomato and Halloumi Bake

Ingredients
- Olive oil
- 2 cloves garlic
- 1 onion
- Pinch chilli flakes
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/4 tsp red wine vinegar
- 1/2 tsp brown sugar
- 400g tin butter beans
- 400g tin cannellini beans
- 2x 400g tins plum tomatoes
- 250g (1 block) halloumi cheese
- Spinach
Method
- Preheat the oven to 200c.
- In an oven proof casserole dish, heat the olive oil and saute the onion and garlic until starting to brown.
- Add the smoked paprika and oregano and stire until fragrant, then add the tomatoes, sugar, and red wine vinegar.
- Stir the sauce. Drain and add both tins of beans. Simmer for five minutes.
- Remove from the heat and stir through the spinach, if using. Arrange the halloumi (sliced into fingers) on top of the sauce.
- Bake, uncovered, for 20 minutes until bubbling. To make the halloumi turn golden, grill for a few minutes at the end of the cooking time.
- Serve with bread or cous cous.
