Smoky Tomato and Halloumi Bake

Ingredients

  • Olive oil
  • 2 cloves garlic
  • 1 onion
  • Pinch chilli flakes
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp red wine vinegar
  • 1/2 tsp brown sugar
  • 400g tin butter beans
  • 400g tin cannellini beans
  • 2x 400g tins plum tomatoes
  • 250g (1 block) halloumi cheese
  • Spinach
  • Bread or cous cous

Method

  1. Preheat the oven to 200c.
  2. In an oven proof casserole dish, heat the olive oil and saute the onion and garlic until starting to brown.
  3. Add the smoked paprika and oregano and stire until fragrant, then add the tomatoes, sugar, and red wine vinegar.
  4. Stir the sauce. Drain and add both tins of beans. Simmer for five minutes.
  5. Remove from the heat and stir through the spinach, if using. Arrange the halloumi (sliced into fingers) on top of the sauce.
  6. Bake, uncovered, for 20 minutes until bubbling. To make the halloumi turn golden, grill for a few minutes at the end of the cooking time.
  7. Serve with bread or cous cous.
