Tuscan Pasta with Pork Sauce

Ingredients

  • Drizzle olive oil
  • 1 onion
  • 3 stalks celery
  • 2 large carrots
  • 400g pork mince
  • 100ml red wine
  • 2 cartons chopped tomatoes
  • 3 bay leaves
  • Italian herbs
  • Salt, pepper
  • Pasta and parmesan to serve.

Method

  1. Finely grate the onion, carrot, and celery using the food processor. Heat the oil in the pan and add the vegetables – fry gently until soft.
  2. Add the pork and stir to brown a little.
  3. Add the wine and allow the alcohol to evaporate. Stir in the chopped tomatoes, add the bay leaves, herbs, and seasoning. Cook on a low heat for about 2 hours.
  4. Cook the pasta in boiling salted water; serve with fresh parmesan.
