Tuscan Pasta with Pork Sauce

Ingredients
- Drizzle olive oil
 
- 1 onion
 
- 3 stalks celery
 
- 2 large carrots
 
- 400g pork mince
 
- 100ml red wine
 
- 2 cartons chopped tomatoes
 
- 3 bay leaves
 
- Italian herbs
 
- Salt, pepper
 
- Pasta and parmesan to serve.
 
Method
- Finely grate the onion, carrot, and celery using the food processor. Heat the oil in the pan and add the vegetables – fry gently until soft.
 
- Add the pork and stir to brown a little.
 
- Add the wine and allow the alcohol to evaporate. Stir in the chopped tomatoes, add the bay leaves, herbs, and seasoning. Cook on a low heat for about 2 hours.
 
- Cook the pasta in boiling salted water; serve with fresh parmesan.
