Two portions microwave rice (mediterranean or tomato flavour works well)
Method
Prepare the vegetables, by peeling, washing, and chopping into chunks. The butternut squash and carrot needs to be quite fine; the courgette can be in chunks about the size of the cherry tomatoes.
Soak the kebab sticks in water if using wooden skewers.
Thread the vegetable pieces alternately onto skewers.
Whisk together the sauce ingredients with a fork; add salt and pepper to taste. Brush the kebabs with the glaze5. Cook under a hot grill for 12 minutes exactly, turning every 4 minutes. Microwave the rice per packet instructions and serve. Garnish with parsley if available.
