Warm Quinoa Salad with Grilled Halloumi

Ingredients
- Olive oil
- 1 red onion, sliced
- 1 large roasted pepper from a jar, sliced
- 200g quinoa (mix of red and white, rinsed thoroughly)
- 500ml vegetable stock made with half a stock cube
- Parsley
- 250g pack halloumi cheese cut into 6 slices
Method
- Heat the oil and fry the onion and pepper for a few minutes. Add the quinoa and cook for a further 3 minutes. Add the stock, cover, and turn the heat down to a simmer. Cook for 15 mins or until soft, then stir through the parsley. Heat the grill.
- Grill the halloumi until both sides are golden and crisp. Serve the quinoa with the grilled halloumi on top.
