Warm Quinoa Salad with Grilled Halloumi

Ingredients

  • Olive oil
  • 1 red onion, sliced
  • 1 large roasted pepper from a jar, sliced
  • 200g quinoa (mix of red and white, rinsed thoroughly)
  • 500ml vegetable stock made with half a stock cube
  • Parsley
  • 250g pack halloumi cheese cut into 6 slices

Method

  1. Heat the oil and fry the onion and pepper for a few minutes. Add the quinoa and cook for a further 3 minutes. Add the stock, cover, and turn the heat down to a simmer. Cook for 15 mins or until soft, then stir through the parsley. Heat the grill.
  2. Grill the halloumi until both sides are golden and crisp. Serve the quinoa with the grilled halloumi on top.
