White Chocolate Cookies

Ingredients

  • 170g unsalted butter
  • 200g dark brown sugar
  • 100g caster sugar
  • 1 tsp vanilla essence
  • 1 large egg + 1 egg yok
  • 400g gf plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 150g white chocolate

Method

  1. Preheat oven to 180c.
  2. Melt the butter un a microwave for about 30-40 seconds, until just liquid. Give it a stir to melt any lumps.
  3. Add the brown sugar and caster sugar to the warm butter and stir well to combine.
  4. Add the vanilla, egg, and additional egg yolk to the butter sugar mixture. Mix well until you have a smooth batter.
  5. Weigh out the flour, xanthan gum and salt in a separate bowl. Add to the main bowl and stir well with a wooden spoon until you have a soft dough. The dough will be shiny but should come away from the sides of the bowl as you mix. If too dry, add a tbsp of milk. If it's sticky, add some more flour.
  6. Stir in the white chocolate.
  7. Divide the dough into 12 pieces, roll into balls on place on a baking try. Press down gently until about 1.5cm thick. Bake for 10-12 minutes. They are ready when they are starting to brown slightly but will still be very soft. Leave them on the tray to cool for 5 minutes before transferring to a wire rack to cool fully.
