Wholewheat Berry Waffles

Ingredients

  • 75g plain flour
  • 50g wholewheat flour
  • 1/2 tbsp granulated sugar
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg, lightly beaten
  • 175ml skimmed milk
  • 40g butter, melted
  • 1/2 tsp vanilla extract
  • 65g frozen blueberries or cherries chopped in half

Method

  1. Place the plain flour, wholewheat flour, sugar, baking powder and salt into a mixing bowl and stir to combine.
  2. In the Kitchenaid, whisk together the egg, milk, melted butter and vanilla extract until well combined.
  3. Add the dry ingredients and give a quick mix until you have a smooth batter.
  4. Leave to rest for 5 minutes; preheat the waffle maker.
  5. Stir in the blueberries / cherries if using. Ladle into the centre of each grid. Close the lid and cook for a few minutes until the waffles are golden.
  6. Serve with chocolate chips, strawberries, and maple syrup.

Makes 5 waffles.
